mozzarella cheese, cubed

grated parmesan cheese
2 Tbsp
chopped parsley

How to Make Earl's Mozzarella Meat Loaf


  • 1Preheat oven to 375 degrees.
  • 2Line jelly-roll pan with aluminum foil.
  • 3Saute onion in oil in large skillet over medium heat 3 minutes.
  • 4Add red pepper, garlic, basil and thyme; saute 5 minutes.
  • 5Combine beef, pork, oats, egg whites, mozzarella, parmesan, parsley, optional salt and pepper in large bowl.
  • 6Add vegetable mixture.
  • 7Shape into large oval on prepared pan.
  • 8Bake for 30 minutes.
  • 9Brush loaf with ketchup.
  • 10Bake 25 minutes or until cooked through.
  • 11Let stand 10 minute before slicing.
