Ingredients
- 1 large onion, coarsely chopped
- 1 tablespoon olive oil
- 1 - red bell pepper, chopped
- 1 - garlic clove, finely chopped
- 1 teaspoon basil
- 1/2 teaspoon thyme
- 1.5 pounds lean ground beef
- 1/2 pound ground pork
- 1 cup old fashioned oats
- 2 - egg whites
- 4 ounces mozzarella cheese, cubed
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped parsley
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup ketchup

Step 1Preheat oven to 375 degrees.

Step 2Line jelly-roll pan with aluminum foil.

Step 3Saute onion in oil in large skillet over medium heat 3 minutes.

Step 4Add red pepper, garlic, basil and thyme; saute 5 minutes.

Step 5Combine beef, pork, oats, egg whites, mozzarella, parmesan, parsley, optional salt and pepper in large bowl.

Step 6Add vegetable mixture.

Step 7Shape into large oval on prepared pan.

Step 8Bake for 30 minutes.

Step 9Brush loaf with ketchup.

Step 10Bake 25 minutes or until cooked through.

Step 11Let stand 10 minute before slicing.
