    onion, coarsely chopped
  • 1 Tbsp
    olive oil
  • 1
    red bell pepper, chopped
  • 1
    garlic clove, finely chopped
  • 1 tsp
    basil
  • 1/2 tsp
    thyme
  • 1.5 lb
    lean ground beef
  • 1/2 lb
    ground pork
  • 1 c
    old fashioned oats
  • 2
    egg whites
  • 4 oz
    mozzarella cheese, cubed
  • 1/2 c
    grated parmesan cheese
  • 2 Tbsp
    chopped parsley
  • 3/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 1/4 c
    ketchup

How to Make Earl's Mozzarella Meat Loaf

Step-by-Step

  1. Preheat oven to 375 degrees.
  2. Line jelly-roll pan with aluminum foil.
  3. Saute onion in oil in large skillet over medium heat 3 minutes.
  4. Add red pepper, garlic, basil and thyme; saute 5 minutes.
  5. Combine beef, pork, oats, egg whites, mozzarella, parmesan, parsley, optional salt and pepper in large bowl.
  6. Add vegetable mixture.
  7. Shape into large oval on prepared pan.
  8. Bake for 30 minutes.
  9. Brush loaf with ketchup.
  10. Bake 25 minutes or until cooked through.
  11. Let stand 10 minute before slicing.
