Rub all over the pork roast.
Wrap tightly in plastic wrap and refrigerate for
Remove from fridge about 2 hours before cooking, but leave wrapped.
Unwrap and put in shallow baking dish.
Bake at 450º for 10 minutes.
Turn heat down to 250º and cook for 50-80 minutes until internal temperature is 145º.
Let rest for about 10 minutes before carving.
