This goes great with Mango/Apple Salsa! It's an excellent way to make a small roast without it getting all dried out. I actually make it in my toaster oven!

Ingredients

  • 3-4 lb
    boneless pork roast
  • 1/4 c
    olive oil
  • 1 1/2 tsp
    rosemary, dried
  • 1 tsp
    sage, dried
  • 1/4 c
    lea & perrins marinade for chicken
  • ·
    salt and pepper

How to Make Delicious Pork Roast

Step-by-Step

  1. Combine all marinade ingredients.
    Rub all over the pork roast.
    Wrap tightly in plastic wrap and refrigerate for
    2-4 hours.
    Remove from fridge about 2 hours before cooking, but leave wrapped.
    Unwrap and put in shallow baking dish.
    Bake at 450º for 10 minutes.
    Turn heat down to 250º and cook for 50-80 minutes until internal temperature is 145º.
    Let rest for about 10 minutes before carving.
