Have this easy and hearty meal in your back pocket when you're not sure what's for dinner. The sausage slightly browns and mixes with the potatoes. Onions and peppers add another layer of flavor and texture, completing the meal. It makes a lot, so depending on your family size or if you want leftovers, cut the recipe in half if needed.

Ingredients
- 5 pounds Russet potatoes
- 1 - 2 tablespoons olive oil
- salt and pepper, to taste
- 2 medium green bell peppers
- 1 medium orange bell pepper
- 1 medium yellow bell pepper
- 1 medium red bell pepper
- 1 medium onion, quartered
- 2 packages cheddar sausage
- 1 package smoked sausage
How To Make deb's sausage, peppers, and onions

Step 1First, get everything cut up and ready to go. Peel and cut the potatoes.

Step 2Dice the onions and peppers.

Step 3In a large skillet, put a little oil in the pan. Add potatoes. Cover and cook potatoes. Salt and pepper to taste.

Step 4Cook until almost tender. You're frying the potatoes.

Step 5Add peppers and onions. Stir and cook until completely cooked.

Step 6In a separate skillet, brown the sausage. Or, cook the sausage in a 350 degree F oven. When I know that the potatoes are almost done, I will put the broiler on to brown my sausage.

Step 7Then I mix everything together - juices and all.
