dad's ribs 'n rice
My husband talks, talks, talks about his Dad's Ribs n Rice. It is a very happy memory for him. True enough a lot of his memories of growing up are food related! Both his parents have passed on early in his life and in theirs. When we moved recently, I found his mother's cookbook. Each card was hand written or typed on her old manual typewriter. As I thumbed thru it I heard my husband's stories/ memories streaming off each page... each one seemed a treasure. This one is his Father's "Ribs n Rice".
Blue Ribbon Recipe
I was really surprised at how good this ribs recipe is with minimal ingredients. This cut of meat tends to be a little tough, but cooking it this way makes it just fall apart. It gets nice and caramelized. The glaze is a bit tangy, slightly sweet and perfect. Everyone will love this!
Ingredients
- 5-6 pounds country pork ribs
- 2 tablespoons oil
- 2 cloves garlic-minced
- 1/2 teaspoon ginger
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 tablespoons sugar
- 1 1/2 cups vinegar
- 4 tablespoons soy sauce
How To Make dad's ribs 'n rice

Step 1Preheat fry pan to 350. Brown ribs in oil until golden.

Step 2Reduce heat to 212 degrees. Combine all other ingredients and pour over ribs.

Step 3Cover and braise 1 1/2 hours or until tender and ribs are glazed. Serve with rice.
