dad's ribs 'n rice
My husband talks, talks, talks about his Dad's Ribs n Rice. It is a very happy memory for him. True enough, a lot of his memories of growing up are food-related! Both his parents have passed on early in his life and in theirs. When we moved recently, I found his mother's cookbook. Each card was handwritten or typed on her old manual typewriter. As I thumbed through it, I heard my husband's stories/ memories streaming off each page... each one seemed a treasure. This one is his Father's "Ribs n Rice".
Blue Ribbon Recipe
We were surprised by how good this country ribs recipe is with minimal ingredients. This cut of meat tends to be slightly tough, but cooking the ribs this way makes the meat tender and falls apart. The sauce is sweet, sour, and tangy, and its flavor infuses into the country ribs. Serve over rice for a comforting and filling meal.
Ingredients
- 2 tablespoons oil
- 5-6 pounds country pork ribs
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 tablespoons granulated sugar
- 1 1/2 cups white vinegar
- 4 tablespoons soy sauce
- cooked rice, for serving
How To Make dad's ribs 'n rice

Step 1Preheat a fry pan with oil to 350 degrees F. Add the ribs.

Step 2Brown ribs in oil until golden.

Step 3Work in batches if needed. Reduce heat to 212 degrees.

Step 4Combine all other ingredients.

Step 5Pour over ribs.

Step 6Cover.

Step 7Braise for 1 1/2 hours or until tender and ribs are glazed. Serve with rice.
