Ingredients
- 2 large bulbs garlic about 20 cloves garlic
- 8 medium jalapenos seeded and sliced
- 1 medium onion quartered
- 1 tablespoon kosher salt
- 2 tablespoons sweet paprika
- 1 tablespoon each cumin and allspice
- 5 pounds pork butt roast
- 4 cups chicken stock
- 1 cup dry white wine
- 6 ounces tomato paste
- 3 tablespoons cornstarch
- 4 tablespoons water

Step 1Add the garlic jalapeno's, onions, salt, paprika, cumin, and allspice to a food processor and process into a paste. Rub the paste over the pork roast. Let marinate in a covered bowl over night. Place the pork roast and marinade in a large crock pot.

Step 2Mix the chicken stock, wine, and tomato paste together until well combined. Pour over the pork roast in the crock pot. Let cook 8 to 10 hours on low heat until the pork falls apart.

Step 3Remove the pork with a slotted spoon to a carving board. Break apart any big pieces and set aside. Strain the liquid in a fine mesh strainer discarding any solids. Place the strained broth in a saucepan. Bring to a boil and reduce for 15 minutes. Mix the cornstarch and water together. Pour in the boiling broth whisking until thickened. Place the pork into the broth and serve.
