These Crock Pot pork chops cook tender and flavorful with onions, mushrooms, and garlic in a simple yet appetizing gravy. They are so succulent that you can cut them with a fork.

Ingredients

  • 4 - bone in pork chops, 3/4-1 inch thick
  • freshly ground black pepper, to taste
  • 1/2 teaspoon woodfired garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 can condensed french onion soup, do not dilute (10.5 oz)
  • 1 1/2 cups low sodium chicken broth, reserve 1/2 cup
  • 1 tablespoon Worcestershire sauce
  • 2 - bay leaves
  • 1 medium yellow onion, diced
  • 12 ounces cremini mushrooms, sliced thick
  • 2 cloves garlic, minced
  • 3 tablespoons corn starch
  • chopped fresh thyme or parsley

How To Make crock pot pork chops

  • Step 1
    Sprinkle both sides of the pork chops with black pepper, garlic powder, and paprika. Heat 1 1/2 tablespoons olive oil over medium-high heat in a large skillet and sear the pork chops on both sides.
  • Step 2
    Add the French onion soup, chicken broth, Worcestershire sauce, bay leaves, and pork chops to the Crock Pot. Cover and cook on high.
  • Step 3
    Meanwhile, heat 1 - 1 1/2 tablespoons olive oil in the skillet. Add the onions and mushrooms and cook over medium-high heat until the onions are soft and the mushrooms are brown, stirring several times.
  • Step 4
    Reduce the heat to low and add the garlic. Cook for a minute while stirring. Stir in the 1/2 cup of reserved broth to deglaze the skillet and get all those brown bits. Add the mixture to the Crock Pot. Cover and cook on high for 2-3 hours or on low for 4-5 hours or until the pork chops are fork tender.
  • Step 5
    Gently remove the pork chops to a plate and cover to keep warm. Mix the corn starch with 1/4 cup of cold water and drizzle it into the Crock Pot while stirring. Cover and cook on high until thickened.
  • Step 6
    Add the pork chops back to the Crock Pot to warm them. Garnish with chopped fresh thyme or parsley.
