My dad used to make this w/ the left-overs from the Christmas ham. Fairly quick and easy to make!

Ingredients

  • 4 ounces no-yolk noodles, not cooked
  • 1 tablespoon canola oil
  • 2 cups cooked, chopped ham
  • 1 medium green bell pepper, seeded, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup sliced celery
  • 1 - 10-3/4 oz can fat-free cream of mushroom soup
  • 1 - 8 oz container lite sour cream
  • 1/2 cup reduced-fat, shredded cheddar cheese

How To Make creamy ham casserole

  • Step 1
    Heat oven to 350. Lightly spray a 1-1/2-quart casserole dish w/ cooking spray. Cook pasta as directed, drain, set aside.
  • Step 2
    Heat oil in lg skillet over med-high heat. Cook ham and next 3 ingredients for 5 mins, stirring often. Remove from heat and stir in soup, sour cream and cooked noodles.
  • Step 3
    Spoon mix into casserole dish. Cover, cook 25 mins. Uncover, sprinkle w/ cheese and bake another 5 mins, or until cheese is melted.
