This is a great complete meal to serve with little effort! Gotta love our slow cookers ~ hope you enjoy !

Ingredients

  • 4 medium potatoes, peeled and cut into 1 inch chunks
  • 3 pounds boneless center-cut pork loin roast, rolled and tied
  • 1 can 16 ounce can whole berry cranberry sauce
  • 1 can 5.5 ounce can apricot nectar
  • 1 small onion, chopped
  • 1/2 cup coarsely chopped dried apricots
  • 1/2 cup granulated sugar
  • 1 teaspoon dry mustard
  • 1/4 teaspoon crushed red pepper

How To Make cranberry pork roast/ slow cooker

  • Step 1
    Place potatoes in 3 1/2 quart (or larger) slow cooker and place roast over potatoes.
  • Step 2
    In a large bowl, combine remaining ingredients; mix well and pour over roast.
  • Step 3
    Cover and cook on high setting for 5 to 6 hours. Remove roast to a cutting board and thinly slice. Serve with potatoes and sauce.
