cranberry meatballs

I found this recipe in taste of home. They are really good. I never have cared much for meatballs, but I love, love these.They are very easy to make, and are great to serve at parties, showers, & weddings.

Ingredients

  • - meatballs:
  • 2 large eggs, lightly beaten
  • 1 cup cornflake crumbs
  • 1/3 cup ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon dried parsley flakes
  • 2 tablespoons dried minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds ground pork
  • - sauce:
  • 1 can (16ozs.) jellied cranberry sauce
  • 1 cup ketchup
  • 3 tablespoons brown sugar
  • 1 tablespoon lemon juice

How To Make cranberry meatballs

  • Step 1
    In a Large mixing bowl, combine first eight meat ball ingredients; crumble meat over mixture and mix well. Shape into 72 meatballs (1 inch. each).
  • Step 2
    Place in a 15" x 10" x 1 " baking pan. Bake at 350 degrees for 20--25 minutes or until no longer pink. Remove from the oven; drain on paper towels.
  • Step 3
    In a large saucepan, combine sauce ingredients. Cook, stirring frequently until the cranberry sauce is melted. Add the meatballs and heat through. Yield:12 main-dish or 24 appetizer servings.
