WHEN I WAS A YOUNG GIRL, OUR NIEGHBOR MADE THIS DISH FOR US ONE EVENING FOR DINNER. IT WAS SO DELICIOUS THAT WE GOT THE RECIPE AND MADE IT OURSELVES. I HAVE SHARED IT WITH MANY PEOPLE OVER THE LAST 35 YEARS OR MORE. ENJOY.

Ingredients

  • 8 small boneless pork ribs
  • 2 tablespoons oil
  • - salt and pepper
  • 2 packages uncle ben's wild rice
  • 1 can diced tomatoes
  • 2 cans water
  • 1/4 cup sugar
  • 1/4 cup barbecue sauce
  • - additional barbecue sauce

How To Make country spareribs with wild rice

  • Step 1
    Heat oil in a skillet. Salt and pepper meat to taste. Brown on all sides.
  • Step 2
    Mix remaining ingredients using both the rice and the seasoning packets and adding 2 cans of water with the tomatoes, and place in a deep casserole dish large enough for meat to lay on top. Place meat on top of rice mixture in a single layer. Cover with additional barbecue sauce and bake one hour uncovered. Before removing from the oven, check to see if the rice is done. It should not be crunchy. If it is, let it cook longer adding more water if needed. Do not let this dish dry out,it should be thick but moist.
