green onions, chopped
1/2 c
margarine or butter, melted
eggs, beaten
15 oz
can cream style corn
11 oz
can mexicorn (whole kernel corn, red & green peppers) drained
1 pkg
corn muffin mix (7 to 8-1/2 oz box)
4 oz
cheddar cheese, shredded (1 cup)

How to Make Country Ham and Corn Casserole


  • 1Grease 12 x 8 (2 quart) baking dish.
  • 2In large bowl, combine all ingredients except cheese. Pour into baking dish.
  • 3Bake at 350 for 45 to 55 minutes or until golden brown and set. Sprinkle with cheddar cheese. Bake an additional 2 minutes to melt cheese. Let stand 5 minutes before serving.
