Ingredients
- 2 cups cooked ham, cubed
- 1/2 cup green onions, chopped
- 1/2 cup margarine or butter, melted
- 3 - eggs, beaten
- 15 ounces can cream style corn
- 11 ounces can mexicorn (whole kernel corn, red & green peppers) drained
- 1 package corn muffin mix (7 to 8-1/2 oz box)
- 4 ounces cheddar cheese, shredded (1 cup)
How To Make country ham and corn casserole

Step 1Grease 12 x 8 (2 quart) baking dish.

Step 2In large bowl, combine all ingredients except cheese. Pour into baking dish.

Step 3Bake at 350 for 45 to 55 minutes or until golden brown and set. Sprinkle with cheddar cheese. Bake an additional 2 minutes to melt cheese. Let stand 5 minutes before serving.
