Ingredients

  • 2 cups cooked ham, cubed
  • 1/2 cup green onions, chopped
  • 1/2 cup margarine or butter, melted
  • 3 - eggs, beaten
  • 15 ounces can cream style corn
  • 11 ounces can mexicorn (whole kernel corn, red & green peppers) drained
  • 1 package corn muffin mix (7 to 8-1/2 oz box)
  • 4 ounces cheddar cheese, shredded (1 cup)

How To Make country ham and corn casserole

  • Step 1
    Grease 12 x 8 (2 quart) baking dish.
  • Step 2
    In large bowl, combine all ingredients except cheese. Pour into baking dish.
  • Step 3
    Bake at 350 for 45 to 55 minutes or until golden brown and set. Sprinkle with cheddar cheese. Bake an additional 2 minutes to melt cheese. Let stand 5 minutes before serving.
