Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

Ingredients
- PORK
- 5 pounds pork roast
- 3 cups coke
- 8 ounces can tomato sauce
- 1/2 cup brown sugar
- 1 tablespoon cayenne pepper
- 6 cloves garlic
- 2 large carrots grated
- 2 small jalapeno pepper seeded and diced
- 1 medium onion chopped
- - 1 cup coke and 1/2 cup sugar
- COSTA VIDA RICE
- 2 cups jasmine rice
- 32 ounces chicken broth
- 1 tablespoon better than bouillon chicken bouillon
- 1 cup cilantro chopped
- 4 - green onions chopped
- 2 - limes juiced
- - salt to taste
How To Make costa vida sweet pork with costa vida rice

Step 1For the pork Place all the ingredients except for the last 1 cup of coke and 1/2 cup sugar in crock pot. cook on high 6 hours. Remove pork and shred with two forks. Add pork back to pot and add the last cup of coke and 1/2 cup sugar to pot. Cook on low 3 more hours

Step 2For the rice Place the broth and bouillon in a large pan. Bring to a boil. Add the rice and simmer covered for 20 minutes. Remove from heat and add the cilantro, green onions, and lime juice. Let sit covered for 10 more minutes. Season with salt.

Step 3Serve the rice with the pork in flour or corn tortillas. Garnish with desired condiments.
