Costa Vida Sweet Pork with Costa Vida Rice

Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

Slow Cooker Crock Pot

pork roast
3 c
8 oz
can tomato sauce
1/2 c
brown sugar
1 Tbsp
cayenne pepper
6 clove
2 large
carrots grated
2 small
jalapeno pepper seeded and diced
1 medium
onion chopped
1 cup coke and 1/2 cup sugar


2 c
jasmine rice
32 oz
chicken broth
1 Tbsp
better than bouillon chicken bouillon
1 c
cilantro chopped
green onions chopped
limes juiced
salt to taste

How to Make Costa Vida Sweet Pork with Costa Vida Rice


  • 1For the pork
    Place all the ingredients except for the last 1 cup of coke and 1/2 cup sugar in crock pot. cook on high 6 hours. Remove pork and shred with two forks. Add pork back to pot and add the last cup of coke and 1/2 cup sugar to pot. Cook on low 3 more hours
  • 2For the rice
    Place the broth and bouillon in a large pan. Bring to a boil. Add the rice and simmer covered for 20 minutes. Remove from heat and add the cilantro, green onions, and lime juice. Let sit covered for 10 more minutes. Season with salt.
  • 3Serve the rice with the pork in flour or corn tortillas. Garnish with desired condiments.
