This is the recipe I came up with for the challenge. I ate mine with sour cream. This will probably become a regular dish.

    eggs
  • 1 c
    milk
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    ground cayenne pepper
  • 1 can(s)
    creamed style corn (15 oz.)
  • 1/2 lb
    ground sausage
  • 1/4 c
    onions, chopped
  • 1/4 c
    bell pepper, chopped
  • 1/4 c
    shredded cheddar cheese
  • 2 Tbsp
    butter, melted
  • 1/4 c
    fresh basil or 1 tsp dried basil
  • BREAD CRUMB TOPPING

  • 2/3 c
    seasoned bread crumbs
  • 1/3 c
    shredded cheddar cheese
  • 2 Tbsp
    butter, melted

How to Make Corn and Sausage Frittata

Step-by-Step

  1. Preheat oven to 350 degrees. In skillet brown sausage, peppers and onions together.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, and cayenne.
  3. Add corn, cheese, basil, and melted butter. Stir in sausage mixture.
  4. Pour into a buttered 9X13 inch baking dish.
  5. For the topping: stir all ingredients together and sprinkle on top of frittata.
  6. Bake 40 minutes. Let stand 10 minutes before slicing.
