There are a million ways to make meatloaf. Our family settled on this recipe many moons ago and it's always perfect. I'm not sure where the recipe came from but I remember mom making it when I was ten. It makes great sandwiches the next day...if there's any left:) Enjoy! 2/3/2013

Ingredients
- 1 1/2 pounds ground chuck
- 1/2 pound ground pork
- 1/2 cup quaker oats or saltine crackers
- 2 - celery stalks
- 1/2 teaspoon black pepper
- 2 - eggs
- 1/2 - onion
- 1/8 cup water
- 1/2 cup catsup or bbq sauce
- 1 3/4 teaspoons salt note: use 11/4 teaspoon salt if using salted crackers
- 2 1/2 slices bread - optional
- 1/2 cup shredded chedder cheese -optional

Step 1Mix eggs, onion, water, celery, salt and pepper in blender. Blend until celery and onion are chopped fine.

Step 2Place ground pork and chuck into a large bowl. Mix together lightly. Too much mixing will toughen the meatloaf.

Step 3Pour oats or crackers, shredded cheese and blender mix into bowl with ground pork and beef.

Step 4Place whole bread slices in loaf pan. Mix meat thoroughly and pack firmly in loaf pan.

Step 5Brush top with catsup or BBQ sauce. Our family likes the catsup.

Step 6Bake at 350 degrees for 50 minutes.

Step 7When done, remove from oven and let stand five minutes before serving.
