comfort food sausage, beans and rice

This is plain and simple comfort food - without all the fuss! I have made this many a time when I came home from work too tired to cook, but still needed to get a meal on the table. It is really quite good, and after taking a few minutes to brown the sausage, you can sit down and rest while your meal finishes cooking! I usually just heat up a can of vegetables with this, and maybe some brown-and-serve rolls, to make the entire meal quick and easy.

Ingredients

  • 1/2 - 1 pounds bulk sausage, your choice
  • 1 and 1/4 cups chicken broth
  • 3/4 cup uncooked long grain white rice
  • 1 - 15 - 16 oz canned pinto beans, drained
  • 1/4 - 1/2 teaspoon red pepper flakes, if desired

How To Make comfort food sausage, beans and rice

  • Step 1
    Brown sausage and drain. Add broth and rice, and bring to a boil. Cover, and lower heat to a simmer.
  • Step 2
    Simmer for 25 minutes, adding beans and red pepper flakes during last five minutes.
