I know there are lots of pork loin recipes out there, this one is just a little different.

Ingredients

  • 1 - 1.8 lb. center cut pork loin fillet
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon canola oil
  • 3/4 cup pineapple juice
  • 1/2 cup coca-cola or other cola soft drink
  • 1/2 cup sliced onion
  • 1/4 teaspoon garlic powder
  • 2 small sweet potatoes, peeled & cut into 8 wedges
  • 1 tablespoon fresh lime juice

How To Make cola-pineapple pork loin & sweet potatoes

  • Step 1
    Preheat oven to 325^. Sprinkle pork with salt & pepper; lightly spray with nonstick cooking spray. In a small, heavy duty Dutch oven, heat oil over medium high heat. Add pork to pan; cook for 5 minutes or until browned on all sides.
  • Step 2
    Remove from heat; slowly add pineapple juice & cola, scraping browned bits from bottom of pan with wooden spoon. Add onion, garlic powder and sweet potatoes. Cover and bake for 25 minutes or until pork is desired degree of doneness & sweet potatoes are tender. Stir in lime juice.
  • Step 3
    Let pork stand for 5 minutes; cut into thin slices. Serve with cooking liquid & sweet potatoes.
