1Preheat oven to 325^. Sprinkle pork with salt & pepper; lightly spray with nonstick cooking spray.
In a small, heavy duty Dutch oven, heat oil over medium high heat.
Add pork to pan; cook for 5 minutes or until browned on all sides.
2Remove from heat; slowly add pineapple juice & cola, scraping browned bits from bottom of pan with wooden spoon.
Add onion, garlic powder and sweet potatoes.
Cover and bake for 25 minutes or until pork is desired degree of doneness & sweet potatoes are tender. Stir in lime juice.
3Let pork stand for 5 minutes; cut into thin slices. Serve with cooking liquid & sweet potatoes.
