cod with chorizo & white bean

When I first made this dish my husband looked at me and said, "this has to be in my top 5 favorite dishes ever." I can't seem to get him to tell me what the other four are. You can add some fresh summer vegetables like zucchini or summer squash. Great served as is or over some long grain rice. Enjoy

Ingredients

  • 1 teaspoon olive oil, extra virgin
  • 1 - shallot, finely chopped
  • 2 ounces spanish chorizo or turkey kielbasa
  • 1 teaspoon chopped fresh thyme
  • 2 cloves garlic, chopped fine
  • 14 1/2 ounces fire roasted tomatoes
  • 1/2 cup dry white wine
  • 1 cup chicken broth, low-fat, low sodium
  • 1 1/4 pounds pacific cod. cut into 4 pieces. i buy frozen individual pices for quick portions.
  • - freshly ground pepper to taste
  • 15 ounces great northern beans, rinsed

How To Make cod with chorizo & white bean

  • Step 1
    Heat oil in a large saucepan or pot over medium-high heat.
  • Step 2
    Add Shallot, chorizo (or Kielbasa) and tyme and cook, stirring, until fragrant, about 1 minute.
  • Step 3
    Add garlic, cook one minute more.
  • Step 4
    Add 1/4 cup of wine and fire roasted tomatoes and cook 2 to 4 minutes until bubbling.
  • Step 5
    Add chicken broth, and remaining wine.
  • Step 6
    Add rinsed northern beans
  • Step 7
    Add Fish. Cook at a simmer for 10 to 15 minutes until flaky. Turning once.
