Ingredients

  • 4 - chorizo sausages
  • 1 large onion, cut into thin strips
  • 1 clove garlic, minced
  • 1 - red bell pepper, cut into thin strips
  • 1 - green bell pepper, cut into thin strips
  • 1 - yellow bell pepper cut into thin strips
  • 2 tablespoons oil
  • 1 can 14.5 ounce diced tomatos in juice
  • 1/2 cup hot water
  • 1/2 cup vegetable broth
  • 1 - bay leaf
  • 2 tablespoons oil
  • - ground chili pepper, paprika; as needed
  • - salt and pepper, as needed

How To Make chorizos a la pomarola

  • Step 1
    Boil the sausages for 10 minutes in a pan of water and set aside.
  • Step 2
    Heat oil in large skillet
  • Step 3
    Add onions and garlic and cook until clear.
  • Step 4
    Add the peppers, salt and pepper, ground chili pepper, and paprika and cook for 4 minutes.
  • Step 5
    Add the tomato, the hot water, the vegetable broth and the bay leaf.
  • Step 6
    Cook over low heat for 10 minutes.
  • Step 7
    Add sausages and continue to cook for 5 minutes or until vegetables are tender.
  • Step 8
    Serve with mashed potatoes or bread.
