- 4 - chorizo sausages
- 1 large onion, cut into thin strips
- 1 clove garlic, minced
- 1 - red bell pepper, cut into thin strips
- 1 - green bell pepper, cut into thin strips
- 1 - yellow bell pepper cut into thin strips
- 2 tablespoons oil
- 1 can 14.5 ounce diced tomatos in juice
- 1/2 cup hot water
- 1/2 cup vegetable broth
- 1 - bay leaf
- 2 tablespoons oil
- - ground chili pepper, paprika; as needed
- - salt and pepper, as needed
How To Make chorizos a la pomarola

Step 1Boil the sausages for 10 minutes in a pan of water and set aside.

Step 2Heat oil in large skillet

Step 3Add onions and garlic and cook until clear.

Step 4Add the peppers, salt and pepper, ground chili pepper, and paprika and cook for 4 minutes.

Step 5Add the tomato, the hot water, the vegetable broth and the bay leaf.

Step 6Cook over low heat for 10 minutes.

Step 7Add sausages and continue to cook for 5 minutes or until vegetables are tender.

Step 8Serve with mashed potatoes or bread.
