    chorizo sausages
  • 1 lg
    onion, cut into thin strips
  • 1 clove
    garlic, minced
  • 1
    red bell pepper, cut into thin strips
  • 1
    green bell pepper, cut into thin strips
  • 1
    yellow bell pepper cut into thin strips
  • 2 Tbsp
    oil
  • 1 can
    14.5 ounce diced tomatos in juice
  • 1/2 c
    hot water
  • 1/2 c
    vegetable broth
  • 1
    bay leaf
  • 2 Tbsp
    oil
  • ground chili pepper, paprika; as needed
  • salt and pepper, as needed

How To Make chorizos a la pomarola

    Boil the sausages for 10 minutes in a pan of water and set aside.

    Heat oil in large skillet
  • 3
    Add onions and garlic and cook until clear.

    Add the peppers, salt and pepper, ground chili pepper, and paprika and cook for 4 minutes.

    Add the tomato, the hot water, the vegetable broth and the bay leaf.

    Cook over low heat for 10 minutes.

    Add sausages and continue to cook for 5 minutes or until vegetables are tender.

    Serve with mashed potatoes or bread.
