I love the flavor of fresh chorizo! Have made hamburger chili Macc for years. So I thought, why not " chorizo" chili? So good!

Ingredients

  • 1 pound fresh chorizo sausage,casing removed
  • 1 medium onion, diced
  • 2 cans tomato sauce, 15 oz.
  • 2 cans light red kidney beans, drained
  • 1/2 package chili seasoning, hot & mild
  • 1 box macaroni noodles,cooked
  • 8-10 ounces velveeta, cubed

How To Make chorizo chili macc

  • Step 1
    Cook macaroni according to directions.
  • Step 2
    Remove casings from chorizo. In a large pot, Brown chorizo with diced onions until no longer pink.Drain if needed.
  • Step 3
    Add the remaining ingredients except cheese & noodles, stirring until well combined. Simmer until chili is completely hot. Reduce heat.Add cheese, stirring occasionally until all cheese is incorporated.
  • Step 4
    Add cooked noodles, mix well. Cover. Allow 10 to 15 minutes before serving.
