1Mix mustard, honey, salt and chili powder in small bowl. Spread over pork. Chill, covered in refrigerator for 4 to 24 hours.
2Preheat oven to 425. Arrange roast in foil lined shallow baking dish. Roast for 1 hour. Let cool for 5 minutes Slice diagonally.
3Serve with mango chutney. May create a sauce with the mustard, honey, salt, chili powder and sour cream. May be made a day ahead and stored, covered in refrigerator. Serves 4
This doesn’t say how much sour cream to use to make the sauce. Use the amount to your taste.
