This recipe is from an old friend. His mother's secret family recipe. It is delicious served with beans and/or rice on flour tortilla or over eggs ... yum!!

Ingredients For chili colorado

  • 4 lb
    pork loin roast
  • garlic salt, to taste
  • 3 clove
  • 1-2 tsp
  • 1 can
    tomato paste (6 oz)
  • 1/2 tsp
    crushed red pepper (adjust to taste)
  • 1 Tbsp
    chili powder
  • water

How To Make chili colorado

  • 1
    Cut roast in 1 inch pieces. Fry in oil. Dry meat out as much as possible. (Evaporate or drain oil.)

    Fill dutch oven 1 inch from the top. Add everything but garlic salt, and simmer until "sauce" consistency. Then add garlic salt to taste. Enjoy!
