This is a long slow process but well worth the effort. The most time really is peeling the garlic cloves so cut some time in prep by getting a jar of peeled garlic toes. I make Jack Daniels BBQ sauce and serve on Hawaiian Rolls. Yummy!!

Ingredients

  • 3 medium clementines
  • 1/4 cup garlic powder
  • 1/4 cup brown sugar, light
  • 1/4 cup creole seasoning
  • 1/4 cup paprika
  • 16 cloves garlic
  • 1/4 cup olive oil, extra virgin
  • 12 pounds boston butt roast

  • Step 1
    Rinse roast and pat dry with paper towels
  • Dry ingredients mixed together
    Step 2
    Combine all other ingredients except garlic in a bowl. Mix well. Set aside
  • Holes cut with knife and garlic inserted
    Step 3
    Start on the side without the fat! Using knife, put a hole in roast and turn handle to make an opening. Insert garlic cloves. Have fun. Be creative.
  • Rub olive oil over crisscross pattern
    Step 4
    Rub with 1/3 olive oil and squeeze juice of 1 clementine before rubbing in 1/3 of the dry mix.
  • Sprinkle the rub in Mr. Joey's BUTT really good.  Use a lot of the mix
    Step 5
    Rub dry mix all over Mr. Joey's Butt!
  • Mr Joey's butt is ready for the oven.
    Step 6
    Refrigerate roast for 3-4 hours. Remove about an hour before placing roast in preheated 250 degree oven.
  • After 10 hours Mr Joey's Butt is almost at the perfect 180 temperature
    Step 7
    Roast for 10-12 hours until internal temperature reaches 180 degrees
