This is a long slow process but well worth the effort. The most time really is peeling the garlic cloves so cut some time in prep by getting a jar of peeled garlic toes.
I make Jack Daniels BBQ sauce and serve on Hawaiian Rolls. Yummy!!

Ingredients

  • 3 medium
    clementines
  • 1/4 c
    garlic powder
  • 1/4 c
    brown sugar, light
  • 1/4 c
    creole seasoning
  • 1/4 c
    paprika
  • 16 clove
    garlic
  • 1/4 c
    olive oil, extra virgin
  • 12 lb
    boston butt roast

How to Make Chef Monica's recipe for Mr. Joey's 12 pound BUTT!

Step-by-Step

  1. Rinse roast and pat dry with paper towels
  2. Combine all other ingredients except garlic in a bowl. Mix well. Set aside
  3. Start on the side without the fat! Using knife, put a hole in roast and turn handle to make an opening. Insert garlic cloves. Have fun. Be creative.
  4. Rub with 1/3 olive oil and squeeze juice of 1 clementine before rubbing in 1/3 of the dry mix.
  5. Rub dry mix all over Mr. Joey's Butt!
  6. Refrigerate roast for 3-4 hours. Remove about an hour before placing roast in preheated 250 degree oven.
  7. Roast for 10-12 hours until internal temperature reaches 180 degrees
