Ingredients
- 1 cup crumbled blue cheese
- 1 pound dry rigatoni pasta
- 2 tablespoons olive oil
- 3 - fresh boneless pork chops, sliced
- 1/4 cup diced medium red onion
- 2 - large carrots, chopped
- 1 tablespoon ranch seasoning
- 1 tablespoon sea salt mixed with black pepper
- margarine
- 1 cup heavy cream
- 2 cans condensed cream of chicken soup (10.75 oz)
- 8 ounces cream cheese, softened
- 3/4 cup half and half
- 1 teaspoon seasoned pepper
- 1 cup shredded extra sharp cheddar cheese
- 1 cup shredded Swiss cheese
- 1 cup shredded colby jack cheese
- 1/2 cup dry bread crumbs
How To Make cheesy pork casserole

Step 1Preheat oven to 350 degrees F.

Step 2Coat a 9x13-inch baking dish with cooking spray. Add crumbled blue cheese evenly.

Step 3Cook rigatoni pasta according to package directions; drain.

Step 4Heat olive oil in a large, deep skillet over medium heat. Add pork chops, red onion and carrot, and saute for 6 minutes or until are tender. Stir in ranch seasoning and sea salt/black pepper. Remove from heat.

Step 5Heat margarine in a medium saucepan over medium heat. Combine heavy cream, soup, cream cheese, half and half and seasoned pepper; stir well and let it simmer for 8 minutes.

Step 6Mix in pork chop mixture and cooked rigatoni. Remove from heat.

Step 7Pour into a prepared baking dish. Sprinkle evenly with cheeses and bread crumbs.

Step 8Bake in the preheated oven for 30 minutes, or until the cheeses are bubbly.
