I found this recipe in the local newspaper many years ago and everyone enjoys it.It makes a large amount so it's good for a crowd.
Chalupa is good made with beef or chicken.
The canned fire roasted green chilies are great or use a combination of fresh sweet and hot peppers.

    3 lbs boneless pork roast
  • ·
    1 lb pinto beans
  • ·
    3-4 cloves garlic,chopped
  • ·
    2 t.chile powder
  • ·
    1 t. cumin
  • ·
    1 t. oregano
  • ·
    4 oz can diced green chilis
  • ·
    1 t. salt
  • ·
    corn chips
  • ·
    cheddar or colby cheese,grated
  • ·
    onion,chopped fine
  • ·
  • ·
  • ·
    avocado,sliced or diced

How to Make Chalupa


  1. Combine pork,dry beans,seasonings in large kettle.Add water to cover,cover and simmer about 6 hrs.Break up meat and cook,uncovered until thick,about 45 mins.To serve,place a layer of corn chips on a plate and top with meat mixture.Garnish with remaining ingredients.
    Note:if you make chicken chalupa,simmer a whole chicken with salt,pepper and garlic.Skin,debone and chop into large chunks. Add to cooked beans and continue with the recipe.
