I found this recipe in the local newspaper many years ago and everyone enjoys it.It makes a large amount so it's good for a crowd. Chalupa is good made with beef or chicken. The canned fire roasted green chilies are great or use a combination of fresh sweet and hot peppers.

Ingredients

  • - 3 lbs boneless pork roast
  • - 1 lb pinto beans
  • - 3-4 cloves garlic,chopped
  • - 2 t.chile powder
  • - 1 t. cumin
  • - 1 t. oregano
  • - 4 oz can diced green chilis
  • - 1 t. salt
  • - corn chips
  • - cheddar or colby cheese,grated
  • - onion,chopped fine
  • - lettuce,shredded
  • - tomato,diced
  • - avocado,sliced or diced

How To Make chalupa

  • Step 1
    Combine pork,dry beans,seasonings in large kettle.Add water to cover,cover and simmer about 6 hrs.Break up meat and cook,uncovered until thick,about 45 mins.To serve,place a layer of corn chips on a plate and top with meat mixture.Garnish with remaining ingredients. Note:if you make chicken chalupa,simmer a whole chicken with salt,pepper and garlic.Skin,debone and chop into large chunks. Add to cooked beans and continue with the recipe.
