Ingredients

  • - 3 lbs. pork loin roast or boneless shoulder
  • - 1 lb. pinto beans
  • - 2 cloves garlic, chopped
  • - 2 tbsp. chili powder
  • - 1 tbsp. cumin, ground
  • - 1 tsp. oregano
  • - 1 can green chiles, chopped, 27 oz
  • - 3 tsp. salt or to taste
  • - fritos
  • - grated cheese
  • - shredded lettuce
  • - onions
  • - diced tomatoes
  • - diced avocados
  • - salsa to taste

How To Make chalupa

  • Step 1
    In large pot, pout pork roast, pinto beans, garlic, chili powder, cumin, oregano, chopped chiles and salt. Cover with water; cook for 6 hours or til beans are tender.
  • Step 2
    Remove roast and all fat and bone. Shred meat. Put meat back in bean mixture, cook for 1 hour more without lid to thicken.
  • Step 3
    Serve over Fritos with grated cheese, shredded lettuce, onions, diced tomatoes, diced avocados and salsa to taste.
