  • ·
    3 lbs. pork loin roast or boneless shoulder
  • ·
    1 lb. pinto beans
  • ·
    2 cloves garlic, chopped
  • ·
    2 tbsp. chili powder
  • ·
    1 tbsp. cumin, ground
  • ·
    1 tsp. oregano
  • ·
    1 can green chiles, chopped, 27 oz
  • ·
    3 tsp. salt or to taste
  • ·
  • ·
    grated cheese
  • ·
    shredded lettuce
  • ·
  • ·
    diced tomatoes
  • ·
    diced avocados
  • ·
    salsa to taste

How to Make Chalupa


  1. In large pot, pout pork roast, pinto beans, garlic, chili powder, cumin, oregano, chopped chiles and salt. Cover with water; cook for 6 hours or til beans are tender.
  2. Remove roast and all fat and bone. Shred meat. Put meat back in bean mixture, cook for 1 hour more without lid to thicken.
  3. Serve over Fritos with grated cheese, shredded lettuce, onions, diced tomatoes, diced avocados and salsa to taste.
