Ingredients

  • 1 c
    strong black coffee
  • 1/3 c
    raisins
  • 1/4 c
    flour
  • 1/3 c
    chili powder
  • 1 tsp
    mexican oregano
  • 1 tsp
    salt
  • 2 Tbsp
    olive oil
  • 1 large
    onion chopped
  • 8 clove
    garlic minced
  • 2
    chipotle chili in adobo sauce minced
  • 4 c
    chicken broth
  • 5 lb
    boneless pork shoulder
  • ·
    limes,rice, pico de gallo, sour cream for serving

How to Make Carne Adovada

Step-by-Step

  1. Preheat oven 325 degrees. Add raisins to the hot cup of coffee and set aside. In a small bowl mix the flour, chili powder, and oregano together. Set aside
  2. Cut pork into chunks about 1 inch size. Season with salt and pepper. Heat a large dutch oven on stove and add the oil. Brown the pork pieces in batches until browned well on all sides. Remove the pork to a plate and set aside.
  3. Add onions to the pan and cook until soft. Add the garlic and cook 1 minute. Add the chipotle and stir for 2 minutes. Add the chili powder mixture. Add the broth and coffee/raisin mixture. Bring to a boil. Reduce heat to a simmer and simmer 5 minutes. With an immersion blender or food processor puree until smooth Return the pork to the pan
  4. Place in oven bake for 2 hours. Serve over rice topped with pico de gallo and sour cream
