cajun style red beans & rice
The true magic in this recipe is to use smoked pork. We use a smoker and smoke 2 or three large pork roast at a time and then divide up the meat and store it in the freezer for year round smoked pork in many recipes.You can make this with regular pork roast meat but Mesquite or Hickory smoked pork bring the dish alive.

Ingredients
- 1 pound smoked pork
- 1 package dried red beans
- 3 cups water
- 1 1/2 cups chopped onions
- 3 cloves garlic, peeled and halved lengthwise
- 1 teaspoon dried oregano
- 1 - bay leaf
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried coriander
- 1 teaspoon red pepper flakes
- 1 cup tomato juice
- 1 cup brown rice
- 2 cups chicken broth
How To Make cajun style red beans & rice

Step 1Prepare roast and smoke using either indirect heat method or smoker for 6 to 8 hours or until roast is done. (You can buy smoked pork if you can find it.

Step 2Rinse beans, put them in a large bowl and cover completely with cold water. Let beans soak overnight or at least 8 hours..

Step 3Drain beans and transfer them to a crock pot, add 3 cups water.

Step 4Place remaining ingredients into crock pot and stir.

Step 5Cook 3 to 4 hours on high or 8 to 10 hours on low.
