cajun sausage soup

Got this recipe from over the open fire cook book.when I made this for a group of campers while on our vacation,I wanted to add a little bite to it. Every one love it and no left overs.

Ingredients

  • 1 pound andouille sausage
  • 1 clove garlic,minced
  • 3 cans chicken broth, low-fat
  • 1 can dark beer
  • 1 large can tomatoes, canned italian-style and diced
  • 1 cup carrots, diced
  • 1 cup green beans,sliced
  • 1 can kidney beans, canned
  • 1 cup okra,frozen
  • 2 sticks celery ribs,diced
  • 1 cup cabbage,cut bite size
  • 1/4 teaspoon salt and pepper
  • 2 tablespoons hot sauce
  • 1 1/4 cups white wine, dry,or simi dry
  • 1 tablespoon freash parsle and thyme
  • 1 medium onion diced
  • 1 cup long grain rice, uncooked

How To Make cajun sausage soup

  • Step 1
    You will need a 12" cast iron skillet and a 14" deep dutch oven... In the skillet brown sausage with garlic,and oinon.With some bacon drippings or olive oil.on med-high heat.

    transfer to the dutch oven stir in broth,beer,tomatoes,green beans carrots,celery,parsley,thyme,salt and pepper,hot sauce,and sliced green onions...Cover and bring to a boil over high heat..Then move to med heat and simmer 15 to 20 min.stering a few times...
  • Step 3
    Now srir in beans and wine: add okra,cabbage,and rice..Stir to mix.. Cover and simmer another 20 to 30 min.serve hot in soup cups.
