Ingredients
- 2 tablespoons butter, plus 1 tsp. olive oil
- 2 - finely chopped green onions
- 1/2 cup finely chopped celery
- 1/2 cup yellow, green and red bell pepper
- 2 - minced garlic cloves
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1/8 teaspoon freshly grated nutmeg
- - salt and freshly ground mixed pepper to taste
- 2 - oregon myrtle leaves or bay leaf
- 1/2 cup half and half
- 1/2 cup tomatoes with green chiles or hot enchilada sauce
- 1/4 teaspoon brown sugar, light
- 1 pound ground sirloin or round steak or lean chuck
- 1 pound uncased chorizo, or hot linquasi sausage, or hot italian or hot jim dean or ground pork
- 2 - extra large eggs, slightly beaten
- 2 teaspoons worchestershire sauce
- 1 1/2 teaspoons hot red enchilada sauce or hot tabasco
- 1 1/4 cups about, bread crumbs, more or less
How To Make cajun meatloaf

Step 1Saute first 11 ingredients together. Add the half/half and enchilada sauce. Simmer for a few minutes. Remove the Myrtle leaf and cool.

Step 2Mix the beef, sausage, eggs, bread crumbs, and sauces together. Add the saute'ed ingredients and mix well together.

Step 3Place in a lightly buttered loaf pan. Bake at 360* for about 70 minutes. Drain the fat and make a gravy with the fat, flour, milk, salt, and pepper to taste.
