  • 2 Tbsp
    butter, plus 1 tsp. olive oil
  • 2
    finely chopped green onions
  • 1/2 c
    finely chopped celery
  • 1/2 c
    yellow, green and red bell pepper
  • 2
    minced garlic cloves
  • 1 tsp
  • 1/2 tsp
    cayenne pepper
  • 1/8 tsp
    freshly grated nutmeg
  • ·
    salt and freshly ground mixed pepper to taste
  • 2
    oregon myrtle leaves or bay leaf
  • 1/2 c
    half and half
  • 1/2 c
    tomatoes with green chiles or hot enchilada sauce
  • 1/4 tsp
    brown sugar, light
  • 1 lb
    ground sirloin or round steak or lean chuck
  • 1 lb
    uncased chorizo, or hot linquasi sausage, or hot italian or hot jim dean or ground pork
  • 2
    extra large eggs, slightly beaten
  • 2 tsp
    worchestershire sauce
  • 1 1/2 tsp
    hot red enchilada sauce or hot tabasco
  • 1 1/4 c
    about, bread crumbs, more or less

How to Make Cajun Meatloaf


  1. Saute first 11 ingredients together. Add the half/half and enchilada sauce. Simmer for a few minutes. Remove the Myrtle leaf and cool.
  2. Mix the beef, sausage, eggs, bread crumbs, and sauces together. Add the saute'ed ingredients and mix well together.
  3. Place in a lightly buttered loaf pan. Bake at 360* for about 70 minutes. Drain the fat and make a gravy with the fat, flour, milk, salt, and pepper to taste.
