brooke's macaroni & cheese with ham bake
Another recipe from the Pastor's wife. When I first met him,the Pastor said "you should taste my wife's mac and cheese with ham,it's good!".I told him we would be happy to serve it for the senior's lunch. Sure enough,I met his wife and she had printed out this recipe for me.Brooke said she sometimes adds 14 c minced green onions to the mac & cheese and says you can use all milk instead of the half and half. We will have it in the Senior lunch rotation soon.

Ingredients

- - 1 pound elbow small macaroni
- - 4 tablespoons butter
- - 1 small onion,minced
- - 1/4 c all purpose flour
- - 2 c half & half
- - 2 c milk
- - black or white pepper to taste
- - 1/2 c sour cream
- - 1/8 teaspoon cayenne pepper
- - 1 1/4 c jack cheese,shredded
- - 1 1/4 c sharp cheddar cheese
- - 8 ounces cooked ham,diced

Step 1DIRECTIONS: Preheat oven to 350 degrees. In a large pot of boiling salted water, cook pasta until al dente; drain and set aside.In a 5-quart heavy pot, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, about 5 minutes. Whisk in flour to coat onion. Combine half & half and milk. In a slow steady stream, whisk in milk until there are no lumps. Cook, stirring often, until mixture is thick and bubbly and coats the back of a wooden spoon, 6 to 8 minutes. Stir in cayenne, and 1 cup of each cheese. Season with salt and pepper. Add pasta to cheese mixture; fold in ham and sour cream.Pour into a 9-by-13-inch baking dish. Top pasta with remaining cheese, Bake until top is golden, about 30 minutes.
