Ingredients
- BRINE
- 3 tablespoons Kosher salt
- 3 tablespoons granulated sugar
- 2 tablespoons fennel seeds
- 2 tablespoons coriander seeds
- 3 bay leaves
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic
- 3 thick bone-in pork chops
- olive oil
How To Make brined pork chops

Step 1Place all ingredients for the brine in a large container. Add 6 cups of water. Mix well. Then add the pork chops and let them brine overnight in the fridge.

Step 2Remove the chops from the brine about 1 hour before cooking and let them come to room temperature.

Step 3Add olive oil to a hot cast iron pan. Sear the chops on each side about 5 minutes per side.

Step 4Place in a 450 degree oven until the internal temperature comes to 145 degrees.

Step 5Let rest for about 10 minutes.
