Ingredients

  • BRINE
  • 3 tablespoons Kosher salt
  • 3 tablespoons granulated sugar
  • 2 tablespoons fennel seeds
  • 2 tablespoons coriander seeds
  • 3 bay leaves
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic
  • 3 thick bone-in pork chops
  • olive oil

How To Make brined pork chops

  • Step 1
    Place all ingredients for the brine in a large container. Add 6 cups of water. Mix well. Then add the pork chops and let them brine overnight in the fridge.
  • Step 2
    Remove the chops from the brine about 1 hour before cooking and let them come to room temperature.
  • Step 3
    Add olive oil to a hot cast iron pan. Sear the chops on each side about 5 minutes per side.
  • Step 4
    Place in a 450 degree oven until the internal temperature comes to 145 degrees.
  • Step 5
    Let rest for about 10 minutes.
