Ingredients

  • 1/2 c
    green or colored bell peppers, chopped
  • 1 small
    onion, chopped
  • 1
    jalapeno pepper, chopped (seeds and membrane removed)
  • 1
    dozen extra-large eggs
  • 1/2 c
    cream or half & half
  • 1 pkg
    frozen shredded hash brown potatoes
  • 1 c
    shredded cheddar cheese
  • 1 tsp
    salt, or to taste
  • 1 tsp
    black pepper, or to taste
  • 1 c
    cubed ham
  • 1 pkg
    pre-cooked sausage crumbles

How to Make Breakfast in a Crockpot

Step-by-Step

  1. In a large bowl. slightly beat the eggs and cream.
  2. Add remaining ingredients to the egg mixture. Stir well to combine.
  3. Pour mixture into a crockpot that has been sprayed with no-stick cooking spray.
  4. Cook overnight (6 to 8 hours) on low.
