breakfast casserole
I went through a garage-sale phase. Went garage-saleing just about every Saturday. One of my 'finds' was the George Foreman contact roaster -- I don't think they even make them anymore. And one of the only recipes I make with it is this one. But, it's delicious and super-easy and makes a goodly portion for two people or enough for 4, with appropriate sides.

Ingredients
- 3 slices bread, cubed
- 1/2 pound canadian bacon or ham, chopped
- 3/4 cup cheddar
- 3/4 cup egg product
- 1 cup milk
- 1/4 teaspoon salt
- 1 teaspoon prepared mustard
- 1 dash cayenne
How To Make breakfast casserole

Step 1Preheat contact roaster.

Step 2Coat the special baking pan with non-stick spray and add the bread cubes.

Step 3Layer the bacon over the bread and then sprinkle the cheese on top.

Step 4Mix the egg product, milk, salt, mustard, and pepper together. Pour over the bread mixture.

Step 5Using oven mitts, insert the baking pan into the contact roaster. Close the lid and set the timer for 30 minutes or bake until eggs are set.

Step 6**NOTE** -- if you don't have a contact roaster, I'm sure that you could probably prep this in a casserole dish instead and bake in a pre-heated 350*F oven for 45 minutes. Just make sure the egg is set.
