Breaded Pork Tenderloin

Ingredients

2 smallpork tenderloins (usually comes in two pieces.)

2 largeeggs, beaten

1 tspthyme

1 Tbspdjon mustard

3/4 tspsalt

1/2 tspground pepper

1 cbreadcrumbs, i use italian

2 Tbspoil

1 capple cider
How to Make Breaded Pork Tenderloin
- Adjust oven rack to lowest position and heat oven to 450 degrees. Line a cookie sheet with foil and spray with Pam. Split each tenderloin almost all the way through. Open up each and pound slightly with fist to flatten. Combine eggs, mustard, thyme, salt and pepper in a shallow pan. In another pan, mix oil and crumbs. Coat each tenderloin with egg mixture and then dredge in bread crumbs. Set on prepared baking sheet and bake until golden brown. About 25 or 30 minutes. Slice
- Cook apple cider in skillet until reduced by half. Spoon sauce over sliced tenderloin
