Pork Tenderloins are one of my favorite meats, so I was always trying to find new recipes or experimenting on new ways to fix it. This recipe is a keeper and very delicious. And the apple topping is out of this world..

Ingredients

  • 2 small pork tenderloins (usually comes in two pieces.)
  • 2 large eggs, beaten
  • 1 teaspoon thyme
  • 1 tablespoon djon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 cup breadcrumbs, i use italian
  • 2 tablespoons oil
  • 1 cup apple cider

How To Make breaded pork tenderloin

  • Step 1
    Adjust oven rack to lowest position and heat oven to 450 degrees. Line a cookie sheet with foil and spray with Pam. Split each tenderloin almost all the way through. Open up each and pound slightly with fist to flatten. Combine eggs, mustard, thyme, salt and pepper in a shallow pan. In another pan, mix oil and crumbs. Coat each tenderloin with egg mixture and then dredge in bread crumbs. Set on prepared baking sheet and bake until golden brown. About 25 or 30 minutes. Slice

    Cook apple cider in skillet until reduced by half. Spoon sauce over sliced tenderloin
