Braised Cabbage Squash & Bacon

I love cabbage and squash. I decided to combine the two with my all time favorite "BACON"...The combination of the three with the sweet garlic vinaigrette made this one great side dish. Cooking with Passion! sw:)

1 medium
red cabbage, sliced
2 medium
yellow squash, cut
1 small
onion, sliced
4 slice
thick bacon, cut into pieces
1-2 Tbsp
italian parsley, chopped
2-3 oz
sweet garlic vinaigrette
2 tsp
roasted granulated garlic
1 tsp
crushed red pepper
1 1/2 tsp
italian seasoning
sea salt to taste


1in a large heated skillet, fry bacon pieces until crispy. remove bacon and set aside
2add onions to the rendered bacon fat, sautee onions until translucent. add pepper, italian seasoning and garlic
3add cabbage to the skillet, sautee for about a minute. add squash, parsley add salt
4sautee for an additinal 4-5 minutes. add vinaigrette and braise for a couple of minutes until squash is fork tender. do not over cook
5on a large platter add you veggie medley and top with crisy bacon. ENJOY!
