boston butt cajun style

This southern gal loves to spice things up and that's just with I did with this pork roast and with Mr. Pete's Cajun Seasoing! Kickin' good!!! adapted from recipe found on Cooks.com

Ingredients

  • 3 tablespoons olive oil
  • 1 - 4 lb boston butt
  • 1 - head of galic (i used 8 cloves)
  • - salt and pepper
  • 2 tablespoons mr. pete's cajun seasoning
  • 1 medium onion, sliced
  • 1 1/2 cups chicken broth
  • - juice of a lemon
  • 1/4 cup hot sauce, i used louisiana hot sauce
  • 1/4 cup apple cider vinegar
  • 2 tablespoons ketscup
  • 2 tablespoons mustard

How To Make boston butt cajun style

  • Step 1
    Be sure to check out Mr. Pete's Seasonings: http://www.mrpetescajunspices.com/store/
  • Step 2
    Preheat oven to 300 degrees.
  • Step 3
    Remove roast from fridge; generously salt and pepper the roast and let sit at room temperature for at least 30 minutes.
  • Step 4
    With a small paring knife, make incisions deep enough all around the butt to insert a clove of garlic into each. NOTE: I used 8 cloves.
  • Step 5
    Heat olive oil over med/high heat until good and hot. Sear roast on both sides about 2 minutes on each side.
  • Step 6
    Generously sprinkle Mr. Pete's Cajun Seasoning all over roast.
  • Step 7
    Lay onion slices on top of and around roast. Mix remaining ingredients and pour around roast.
  • Step 8
    Cover pot with a tight fitting lid. Place in oven for 4 to 5 hours and cook until it falls apart. Adjust time for a larger roast. Serve with your favorite veggies or shred for BBQ sammie.
