Bacon Bacon Bacon! Nothing goes better with bacon more than Porkilicious Pork Belly! With the addition of Uncle Gary's Gourmet Peppers & Jelly along with Asian ingredients; makes this truly the best thing I've ever eaten. I'm not kidding. Something this good should be illegal. Ingredients
- 3 pounds pork belly
- 4 cups low sodium chicken stock
- 1/2 cup sherry
- 1/4 cup soy sauce
- 1/8 cup fish sauce
- 1/4 cup uncle gary's gourmet pepper juice
- 6 - key limes, quartered
- 4-5 - thai chili peppers
- 1/2 large onion
- 2 - inch piece of ginger
- 1/2 bunch chopped cilantro leaves
- 6 - garlic cloves
- 6 large basil leaves
- 1/3 cup uncle gary's gourmet peppers
- 1/3 cup uncle gary's gourmet pepper jelly
- 5-7 slices thick bacon slices
How To Make bodacious bacon wrapped pepper pork belly

Step 1Score pork belly. Place pork belly and ingredients 2-12 in a stock pot. Bring to a boil and reduce heat to low. Cook for 2 hours. Remove from stock and rest for at least 15 minutes

Step 2Lay bacon slices on a flat surface slightly overlapping each other. Place basil leaves and peppers in the center of bacon slices. Lay pork belly skin-side down on bacon.

Step 3Wrap bacon around pork belly and secure with tooth picks.

Step 4Meanwhile combine pepper jelly and 1/4 cup stock in a mixing bowl. Mix well. Bake for 30 minutes until bacon begins to brown. Baste pork with the sauce the last 15 minutes of cooking time. Drizzle remaining pepper over pork belly.
