1Score pork belly. Place pork belly and ingredients 2-12 in a stock pot. Bring to a boil and reduce heat to low. Cook for 2 hours. Remove from stock and rest for at least 15 minutes
2Lay bacon slices on a flat surface slightly overlapping each other. Place basil leaves and peppers in the center of bacon slices. Lay pork belly skin-side down on bacon.
3Wrap bacon around pork belly and secure with tooth picks.
4Meanwhile combine pepper jelly and 1/4 cup stock in a mixing bowl. Mix well. Bake for 30 minutes until bacon begins to brown. Baste pork with the sauce the last 15 minutes of cooking time. Drizzle remaining pepper over pork belly.
