With the addition of Uncle Gary's Gourmet Peppers & Jelly along with Asian ingredients; makes this truly the best thing I've ever eaten. I'm not kidding. Something this good should be illegal.     pork belly
  • 4 c
    low sodium chicken stock
  • 1/2 c
  • 1/4 c
    soy sauce
  • 1/8 c
    fish sauce
  • 1/4 c
    uncle gary's gourmet pepper juice
  • 6
    key limes, quartered
  • 4-5
    thai chili peppers
  • 1/2 large
  • 2
    inch piece of ginger
  • 1/2 bunch
    chopped cilantro leaves
  • 6
    garlic cloves
  • 6 large
    basil leaves
  • 1/3 c
    uncle gary's gourmet peppers
  • 1/3 c
    uncle gary's gourmet pepper jelly
  • 5-7 slice
    thick bacon slices

How to Make Bodacious Bacon Wrapped Pepper Pork Belly


  1. Score pork belly. Place pork belly and ingredients 2-12 in a stock pot. Bring to a boil and reduce heat to low. Cook for 2 hours. Remove from stock and rest for at least 15 minutes
  2. Lay bacon slices on a flat surface slightly overlapping each other. Place basil leaves and peppers in the center of bacon slices. Lay pork belly skin-side down on bacon.
  3. Wrap bacon around pork belly and secure with tooth picks.
  4. Meanwhile combine pepper jelly and 1/4 cup stock in a mixing bowl. Mix well. Bake for 30 minutes until bacon begins to brown. Baste pork with the sauce the last 15 minutes of cooking time. Drizzle remaining pepper over pork belly.
