We make a meal on this dish. Nothing else is needed unless you want to slice some fresh tomatoes or have a small salad. That is, of course, not counting the corn bread that is an automatic accompaniment here in Texas.

Ingredients

  • 2 pounds fresh shelled blackeyed peas with snaps (can be frozen, but not canned)
  • 1 - chopped onion
  • 2 - celery stalks, chopped
  • 10 small red new potatoes
  • 1 - slab salt pork or 1/2 pound lean diced ham steak

How To Make blackeyed peas

  • Step 1
    Cover ingredients in a large pan (dutch oven). Can use either water or broth or a combination. Cook just until peas and potatoes are tender. Salt to taste.
