Ingredients
- 3.5 cups black-eyed peas, fresh or thawed
- 3 cups chicken stock
- 4 ounces ham, finely chopped
- 1 small yellow onion, chopped
- 2 tablespoons balsamic vinegar
- 3 large garlic cloves, minced
- 1 - bay leaf
- 1/2 teaspoon dried thyme, crushed
- 1/4 teaspoon red pepper, crushed
How To Make black-eyed peas with ham

Step 1Bring all ingredients to boil in heavy large saucepan; Reduce heat and simmer until peas are tender, stirring occasionally, about 45 minutes.

Step 2Season to taste with salt and pepper.

Step 3NOTE: May substitute red wine vinegar for balsamic vinegar.
