Ingredients

  • 3.5 cups black-eyed peas, fresh or thawed
  • 3 cups chicken stock
  • 4 ounces ham, finely chopped
  • 1 small yellow onion, chopped
  • 2 tablespoons balsamic vinegar
  • 3 large garlic cloves, minced
  • 1 - bay leaf
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon red pepper, crushed

How To Make black-eyed peas with ham

  • Step 1
    Bring all ingredients to boil in heavy large saucepan; Reduce heat and simmer until peas are tender, stirring occasionally, about 45 minutes.
  • Step 2
    Season to taste with salt and pepper.
  • Step 3
    NOTE: May substitute red wine vinegar for balsamic vinegar.
