chicken stock
4 oz
ham, finely chopped
1 small
yellow onion, chopped
2 Tbsp
balsamic vinegar
3 large
garlic cloves, minced
bay leaf
1/2 tsp
dried thyme, crushed
1/4 tsp
red pepper, crushed

How to Make Black-Eyed Peas with Ham


  • 1Bring all ingredients to boil in heavy large saucepan; Reduce heat and simmer until peas are tender, stirring occasionally, about 45 minutes.
  • 2Season to taste with salt and pepper.
  • 3NOTE: May substitute red wine vinegar for balsamic vinegar.
