I like to make this on new years day instead of the traditional black eyed peas.

  • 2 (15 oz) can(s)
    black eyed peas -- drained
  • 1 small
    onion -- chopped
  • 1 lb
    hot pork sausage -- browned
  • 1 can(s)
    rotel tomatoes
  • 2 box
    jiffy cornbread mix
  • ·
    chedder cheese -- shredded

How to Make Black-Eyed Pea Casserole


  1. Brown your sausage, onions, and set aside.
  2. Mix peas, rotel, and sausage mixture together in a casserole dish.
  3. Mix cornbread mix per directions and pour over top of mixture.
  4. Place in 350 degree over and bake until corn bread is done.
  5. Remove from oven and cover liberally with cheese. Place back in oven and melt cheese.
