I like to make this on new years day instead of the traditional black eyed peas.

2 (15 oz) can(s)
black eyed peas -- drained
1 small
onion -- chopped
1 lb
hot pork sausage -- browned
1 can(s)
rotel tomatoes
2 box
jiffy cornbread mix
chedder cheese -- shredded

How to Make Black-Eyed Pea Casserole


  • 1Brown your sausage, onions, and set aside.
  • 2Mix peas, rotel, and sausage mixture together in a casserole dish.
  • 3Mix cornbread mix per directions and pour over top of mixture.
  • 4Place in 350 degree over and bake until corn bread is done.
  • 5Remove from oven and cover liberally with cheese. Place back in oven and melt cheese.
