I like to make this on new years day instead of the traditional black eyed peas.

Ingredients
- 2 (15 oz) cans black eyed peas -- drained
- 1 small onion -- chopped
- 1 pound hot pork sausage -- browned
- 1 can rotel tomatoes
- 2 boxes jiffy cornbread mix
- - chedder cheese -- shredded
How To Make black-eyed pea casserole

Step 1Brown your sausage, onions, and set aside.

Step 2Mix peas, rotel, and sausage mixture together in a casserole dish.

Step 3Mix cornbread mix per directions and pour over top of mixture.

Step 4Place in 350 degree over and bake until corn bread is done.

Step 5Remove from oven and cover liberally with cheese. Place back in oven and melt cheese.
