This sandwich is dedicated to my dear friend Big Bill Wentz. He lost his battle to cancer on July 14th. He was a loving husband, father, friend, true warrior, the face and voice of inspiration, strength, love, faith, spirituality, loyalty, warmth and happiness. Oh, and he could cook his butt off! Just take a look at his Just A Pinch recipes. Though my heart is heavy and eyes filled with tears, we now have our own personal guardian angel. Bill get our Ultimate Kitchen in heaven ready for the Big Bill & Logan Foodie Show. It will be EPIC! I love you Brother. RIP I love you brother. sw :)

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 1/2 tablespoons montreal steak seasoning
  • 1 teaspoon thyme, dried
  • 4 small red skin potatoes, 1/4" thick and parboiled
  • 1 small red onion sliced 1/4" thick
  • 8 - thick slices bacon
  • 1 pound sirloin steak
  • 4 tablespoons butter, softened
  • 4 - ciabatta rolls, sliced in half
  • 2 tablespoons horseradish sauce
  • 2 tablespoons chimichurri sauce
  • 8 slices jalapeno havarti cheese
  • 2 - handfuls organic herb salad mix

How To Make big bill’s manly meat & potato sammie

  • Step 1
    Combine extra virgin olive oil, steak seasoning and thyme in a small mixing bowl.
  • Step 2
    Brush potato slices, red onion slices and steak with mixture.
  • Step 3
    Preheat large grill pan on griddle to medium-high heat, fry bacon until brown and crispy. Remove; drain on paper towels.
  • Step 4
    Add potato and onion slices to grill pan. Cook for 2-3 minutes; turn and cook for another 2 minutes or until golden brown
  • Step 5
    Add steak to grill pan; cook for 5 minutes then turn and cook for 3-4 minutes or until desired doneness. Rest and slice
  • Step 6
    Combine horseradish spread & chimichurri; spread on bottom of slices of bread followed by 1 ounce of cheese, 2 slices bacon, steak slices, herb salad mix, potato slices, onion slices and 1 ounce of cheese; place roll tops on.
  • Step 7
    Brush butter on outside of ciabatta rolls. Grill for 2-3 minutes on both sides and bread has golden grill marks
