betty's sausages "spanish" style
Loaded with peppers and a rich tomato sauce, this is delicious but not traditional. Serve with mashed potatoes, jacket potatoes, and sour cream or crusty bread with butter. Leftovers are amazing the next day!

Ingredients For betty's sausages "spanish" style

10thick best quality pork sausages you can buy (about 3 pounds or 1.5 kilos)

1large onion, sliced fine

2 tspgarlic

1 canchopped tomatoes
-
2large red bell peppers (capsicums), sliced

4stalks celery, sliced
-
1 cancannellini beans, well rinsed
- SAUCE
-
1 tspthyme
-
1 tspcumin
-
1 tspground coriander
-
2 tspseeded mustard
-
1 TbspWorcestershire sauce
-
2 Tbspsweet onion relish (chutney)
-
1 cbeef stock (made with a bullion is fine)

1 Tbspcorn starch (corn flour) a heaped tablespoon
-
1/4 cwater
- OIL FOR COOKING

2 Tbspvegetable oil (1 for the sausages and 1 for the vegetables)
How To Make betty's sausages "spanish" style

1Cook the sausages in a large frying pan with 1 Tbsp oil until they are browned all over but not cooked all the way through (this will take about 10 minutes).

2While the sausages are cooking, slice your peppers, onions, and celery.

3In a jug add all the sauce ingredients EXCEPT for the water and corn starch.

4Remove the sausages. Add the remaining 1 Tbsp of oil and add the onions, peppers, and celery. Cook and stir every few minutes. While they are cooking, slice your sausages into coins - keep all the juices if possible.

5Return the sausages to the pan with the juices and cook for about 10 minutes. Add the garlic and tomatoes and stir well.

6Add the sauce ingredients in the jug. Reduce heat and cook for another 15 minutes.

7Add the rinsed beans. Mix the water with the corn starch and stir. Add into the pan and stir well. Allow to thicken (about 2 - 3 minutes) and turn off the heat.

8Serve with mash, jacket potatoes or with crusty bread with lashings of butter.
