Loaded with peppers and a rich tomato sauce, this is delicious but not traditional. Serve with mashed potatoes, jacket potatoes, and sour cream or crusty bread with butter. Leftovers are amazing the next day!

Ingredients

  • 10 thick best quality pork sausages you can buy (about 3 pounds or 1.5 kilos)
  • 1 large onion, sliced fine
  • 2 teaspoons garlic
  • 1 can chopped tomatoes
  • 2 large red bell peppers (capsicums), sliced
  • 4 stalks celery, sliced
  • 1 can cannellini beans, well rinsed
  • SAUCE
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 2 teaspoons seeded mustard
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons sweet onion relish (chutney)
  • 1 cup beef stock (made with a bullion is fine)
  • 1 tablespoon corn starch (corn flour) a heaped tablespoon
  • 1/4 cup water
  • OIL FOR COOKING
  • 2 tablespoons vegetable oil (1 for the sausages and 1 for the vegetables)

How To Make betty's sausages "spanish" style

  • Step 1
    Cook the sausages in a large frying pan with 1 Tbsp oil until they are browned all over but not cooked all the way through (this will take about 10 minutes).
  • Step 2
    While the sausages are cooking, slice your peppers, onions, and celery.
  • Step 3
    In a jug add all the sauce ingredients EXCEPT for the water and corn starch.
  • Step 4
    Remove the sausages. Add the remaining 1 Tbsp of oil and add the onions, peppers, and celery. Cook and stir every few minutes. While they are cooking, slice your sausages into coins - keep all the juices if possible.
  • Step 5
    Return the sausages to the pan with the juices and cook for about 10 minutes. Add the garlic and tomatoes and stir well.
  • Step 6
    Add the sauce ingredients in the jug. Reduce heat and cook for another 15 minutes.
  • Step 7
    Add the rinsed beans. Mix the water with the corn starch and stir. Add into the pan and stir well. Allow to thicken (about 2 - 3 minutes) and turn off the heat.
  • Step 8
    Serve with mash, jacket potatoes or with crusty bread with lashings of butter.
