betty's maltese peperonata with sausages

A rich Maltese-style stove-top casserole filled with tomatoes, capsicum, and flavourful sausages. The recipe came from a friend whose parents came to Australia as children from Malta. Delicious and ready in under an hour. Serve with crusty bread and a side salad for a complete meal. I have doubled the recipe given to me as I have a large family; feel free to halve it as needed. If you are feeding a large crowd, this can be doubled; you just need a big enough pot.

Ingredients

  • 2 onions, sliced as fine as you can
  • 2 - 4 red capsicums, seeds removed and sliced medium fine (about 2 pounds)
  • 2 pounds Italian sausage or a flavourful sausage of choice
  • 2 teaspoons minced garlic (I use from a jar)
  • 2 cans diced tinned tomatoes from Italy
  • 1 cup water (used to swoosh out the cans)
  • 2 teaspoons oregano, dried
  • 2 teaspoons white sugar
  • salt and pepper, as needed
  • 1 tablespoon red wine vinegar (the secret ingredient)
  • 1 tablespoon oil, divided to cook the sausages and the onions with capsicums
  • 1 can lentils, well rinsed

How To Make betty's maltese peperonata with sausages

  • Step 1
    In a heavy-based casserole dish that can be used on your cooktop, fry the sausages so they are browned all over but not cooked all the way through in a little oil.
  • Step 2
    While they are cooking, slice your onions and capsicums.
  • Step 3
    Remove the sausages, add more oil, and add the onions and capsicums. Cook and stir regularly for 10 minutes. While doing this, slice your sausages into "coins" about 2 cm thick (less than an inch).
  • Step 4
    Return the sausages to the pot with the garlic and stir. Add everything else EXCEPT the lentils. Reduce the heat to low and cook for 35 minutes. Add the rinsed lentils and cook for another 10 minutes.
  • Step 5
    Serve with crusty bread to sop up the juices and a salad on the side - this is amazing and so delicious!
