Summer is on her way and nothing taste as good as a brat cooked over open flame. This is a family favorite, time and again. We have used beer brats, jalapeno` brats (yum), even pinapple brats, the choices are endless, and the men and kids stuffed themselves.
1bring your brats to a boil for 5 minutes to rid them of excess fat, we'll be giving them a fatty boost in a few minutes. After letting them cool enough to handle slice them longwise down the middle, and place two half pineapple slices and two thin slices of cheddar cheese in the opening. Wrap the entire thing with uncooked bacon, if you need to, use tooth picks to keep bacon on. Grill or cook in broiler until bacon is brown and cheese is melted. Serve with the usual suspects or with pickles and preserves of your choice.
