Ingredients

  • 2 pounds pork tenderloin
  • 6 tablespoons dry bread crumbs
  • 6 tablespoons Parmesan cheese (shaker style)
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 3 cups tomato sauce, Italian seasoned
  • 250 grams shredded mozzarella cheese
  • 1 handful parsley, chopped

How To Make bea's pork parmigiana

  • Step 1
    Pour about 1 cup of the tomato pasta sauce over the bottom of a 9”x13” baking pan and set aside. Just enough sauce to cover the bottom.
  • Step 2
    Place the pork medallions, one at a time, between two pieces of plastic wrap, and beat lightly with a rubber mallet until about 1/2 thick. This tenderizes the meat. Set aside.
  • Step 3
    Combine the bread crumbs, Parmesan cheese, flour, oregano, onion powder, and salt in a shallow dish.
  • Step 4
    Whisk the eggs together in another shallow bowl.
  • Step 5
    Dip the pork pieces in the egg, and then coat with the bread crumb mixture.
  • Step 6
    Heat oil to medium-high heat and brown the coated pork pieces, 3 to 4 minutes per side, until golden brown.
  • Step 7
    Place the browned pork pieces over the sauce in the pan in a single layer.
  • Step 8
    Add the remaining tomato pasta sauce, then sprinkle the shredded cheese evenly over the sauce.
  • Step 9
    Cover with foil and place in a preheated 350-degree Fahrenheit oven for 30 minutes.

    Remove the foil and cook for another 10 minutes or until the cheese is bubbling and starts to brown.

    Garnish with chopped parsley and let sit for 5 minutes before serving.
