A traditional German breakfast meal. You can try this with any kind of link sausage: Kielbasa, bratwurst, knackwurst, etc.

Blue Ribbon Recipe

A hearty dish that has everything you want for breakfast, all in one pan. Potatoes are a hearty base for the onions and peppers on top. Then it's topped with sausages and gently cooked scrambled eggs. This is a German recipe that is meant for breakfast but would make a great lunch or dinner too. We used the Lil' Smokies, but any type of sausage would work. It would just slightly adjust the flavor profile.

Ingredients

  • 2 cups frozen cubed hash brown potatoes
  • 3 tablespoons oil, divided
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper (any color)
  • 10 - Lil' Smokies sausages (or any other sausage you'd like)
  • 4 large eggs
  • salt, to taste
  • black pepper, to taste

How To Make bauernfrüstuck (farmer's breakfast)

  • Brown the potatoes.
    Step 1
    Fry hash browns in 2 Tbsp of oil in a large skillet until they soften.
  • Add onions and peppers.
    Step 2
    Add onion and bell pepper. Cook a while longer until potatoes begin to brown.
  • Add the sliced Lil' Smokies.
    Step 3
    Slice the little smokies into small pieces and add them to the skillet.
  • Add eggs to the skillet.
    Step 4
    When potatoes are browned, add another 1 Tbsp of oil to the pan. Crack the eggs into the skillet.
  • Stir until the eggs are cooked.
    Step 5
    Stir mixture until eggs are cooked. Salt and pepper to taste.
