baked pork chops with brussels sprouts and friends
This is another low salt/carb dish, relying on the bread crumbs for salt and sweet potatoes, which affects the carb content. The chops are breaded with low-carb breadcrumb mix, sautéed, then baked with the veggies. The veggies: Brussels sprouts, sweet potatoes, onions, and tomatoes. I consider sweet potatoes, onions, and tomatoes "friends" because I use them all the time; their flavor influences all of my meals. Potatoes, onions, tomatoes, and sprouts go in the oven first, then they are followed by the sautéed chops. Once again, use the ingredients within the meal to flavor it.

Ingredients
- BREADING
- 2 ounces low-carb bread crumbs
- 1/2 ounce almond flour
- granulated garlic, to taste
- black pepper, to taste
- dried rosemary, to taste
- EGG WASH
- granulated garlic, to taste
- 1 large egg, beaten
- freshly ground black pepper, to taste
- 1/2 cup almond milk
- OTHER INGREDIENTS
- 2 - boneless pork chops center cut (7 oz each)
- 5 ounces diced sweet potatoes
- 2 cloves garlic, sliced
- black pepper, to taste
- dried rosemary, to taste
- 3 slices red onions
- 8 grape tomatoes, sliced
- 4 tablespoons olive oil
- 5 Brussels sprouts, cut up
How To Make baked pork chops with brussels sprouts and friends

Step 1Cut up the veggies;combine the breadcrumbs, almond flour, granulated garlic, b. pepper and dried rosemary for the breading; whip up the egg and almond milk; preheat your oven to 425°

Step 2put the veggies in a glass baking pan, add the black pepper, dried rosemary and garlic; drizzle with 2 tbsp of olive oil; put it in the oven; set the timer for 45 min.

Step 3breading the chops: slightly pound the chops to soften it; dip the chops in the egg mix then dredge in the breading mix. Set aside and let warm to room temp.

Step 4Add 2 tbsp olive oil to a pan. When the veggies have been in the oven for 25 minutes, turn the gas on high heat and quickly sauté the chops, browng both sides. The inside should be rare.

Step 5Open the oven and place the breaded pork chop on top of the veggies to finish cooking: 10-15 minutes

Step 6Take the chops and veggies out of the oven and put them on a plate. Let cool for a few minutes
