My husband bought a small pork tenderloin on sale. Before he got to put his spin on it, and my reviewing recipes from JAP for days on end. I said, I have bacon! Let's wrap it first and then cook it on the smoker. We were high-fiving and raising our hands after we made this! It WAS so tender and delicious, but it's gone now.

Ingredients

  • 1 package thin bacon slices
  • 1 small pork loin, boneless
  • - your favorite rub

How To Make bacon-wrapped pork loin for two

  • Step 1
    Unwrap pork tenderloin, sprinkle your favorite rub.
  • Step 2
    Take bacon and make a basket weave pattern over the top of pork tenderloin. After completing, add another sprinkle of rub.
  • Step 3
    Place tenderloin on hot or high temp smoker (about 385 degrees), and let cook for 45 minutes or internal temperature reaches 155 degrees.
