Ingredients
- 4 slices bacon, diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1/2 pound ground beef
- 1/4 cup panko bread crumbs, dry
- 2 tablespoons parsley
- 1/2 teaspoon paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pepper
- 1 x large egg, beaten
How To Make bacon meatballs

Step 1Preheat oven to 400 degrees F. Coat a broiler pan with nonstick cooking spray.

Step 2Cook bacon in a skillet over medium high heat until starting to crisp, about 4 minutes; remove & set aside on a paper towel lined plate. Leave bacon drippings in skillet.

Step 3Saute onion in the same skillet (with drippings) over medium heat until softened, about 3 minutes. Add garlic; cook 1 minute.

Step 4Combine beef, bacon, onion mixture, bread crumbs, parsley, paprika, salt & pepper in a large bowl; mix well. Stir in beaten egg.

Step 5Form mixture into 1" meatballs & place on prepared broiler pan. Bake meatballs until fully cooked, about 10 minutes.

Step 6TIPS: DOUBLE: Prepare twice the amount of meatball mixture & bake in batches to avoid overcrowding the pan. FREEZE: Freeze (uncooked) meatballs on a baking sheet then transfer to an airtight container & keep frozen until ready to use. Thaw before baking.
