Ingredients For bacon meatballs

4 slicebacon, diced

1/2 conion, diced

2 clovegarlic, minced

1/2 lbground beef
-
1/4 cpanko bread crumbs, dry

2 Tbspparsley
-
1/2 tsppaprika
-
1/2 tspkosher salt
-
1/2 tsppepper
-
1 x lgegg, beaten
How To Make bacon meatballs

1Preheat oven to 400 degrees F. Coat a broiler pan with nonstick cooking spray.

2Cook bacon in a skillet over medium high heat until starting to crisp, about 4 minutes; remove & set aside on a paper towel lined plate. Leave bacon drippings in skillet.

3Saute onion in the same skillet (with drippings) over medium heat until softened, about 3 minutes. Add garlic; cook 1 minute.

4Combine beef, bacon, onion mixture, bread crumbs, parsley, paprika, salt & pepper in a large bowl; mix well. Stir in beaten egg.

5Form mixture into 1" meatballs & place on prepared broiler pan. Bake meatballs until fully cooked, about 10 minutes.

6TIPS: DOUBLE: Prepare twice the amount of meatball mixture & bake in batches to avoid overcrowding the pan. FREEZE: Freeze (uncooked) meatballs on a baking sheet then transfer to an airtight container & keep frozen until ready to use. Thaw before baking.
