Ingredients

  • 4 slices bacon, diced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 pound ground beef
  • 1/4 cup panko bread crumbs, dry
  • 2 tablespoons parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 x large egg, beaten

How To Make bacon meatballs

  • Step 1
    Preheat oven to 400 degrees F. Coat a broiler pan with nonstick cooking spray.
  • Step 2
    Cook bacon in a skillet over medium high heat until starting to crisp, about 4 minutes; remove & set aside on a paper towel lined plate. Leave bacon drippings in skillet.
  • Step 3
    Saute onion in the same skillet (with drippings) over medium heat until softened, about 3 minutes. Add garlic; cook 1 minute.
  • Step 4
    Combine beef, bacon, onion mixture, bread crumbs, parsley, paprika, salt & pepper in a large bowl; mix well. Stir in beaten egg.
  • Step 5
    Form mixture into 1" meatballs & place on prepared broiler pan. Bake meatballs until fully cooked, about 10 minutes.
  • Step 6
    TIPS: DOUBLE: Prepare twice the amount of meatball mixture & bake in batches to avoid overcrowding the pan. FREEZE: Freeze (uncooked) meatballs on a baking sheet then transfer to an airtight container & keep frozen until ready to use. Thaw before baking.
