How to Make BACON JAM
- Roughly chop bacon and cook in a heavy pot. Transfer to a bowl using a slotted spoon, draining off most drippings. Saute onion & garlic in the pot for 5 minutes until soft and starting to turn brown. Return the bacon to the pan, add the brown sugar, coffee, maple syrup, vinegar and mustard. Cook over medium heat for 1/2 hour, or until deep golden brown and thickened to the consistency of jam.
