Ingredients
- 1 pound good quality bacon
- 1 small onion, chopped
- 4-5 cloves garlic ,minced
- 1/2 cup brown sugar
- 1/2 cup coffee
- 1/4 cup maple syrup
- 1 tablespoon balsamic vinegar
- 1 tablespoon mustard, grainy
How To Make bacon jam

Step 1Roughly chop bacon and cook in a heavy pot. Transfer to a bowl using a slotted spoon, draining off most drippings. Saute onion & garlic in the pot for 5 minutes until soft and starting to turn brown. Return the bacon to the pan, add the brown sugar, coffee, maple syrup, vinegar and mustard. Cook over medium heat for 1/2 hour, or until deep golden brown and thickened to the consistency of jam.
